Aloo Dum Biryani Ingredients:

  • For the Dum Aloo
  • ½ kg small peeled potatoes (aloo)
  • ¼ teaspoon yellow food color (zarda ka rang)
  • 2- 3 tablespoons of cooking oil
  • 1 pinch of salt
  • 1 cup whisked yogurt (dahi)
  • ½ tablespoon red chili powder (lal mirch powder)
  • 1 sachet of chicken powder 10gms
  • 1 teaspoon of garam masala powder
  • ½ teaspoon of turmeric powder (haldi powder)
  • 1 tablespoon of coriander powder (dhania powder)
  • 1 teaspoon salt to taste
  • ¼ teaspoon of Nutmeg and mace powder (Jaifil javitri powder)
  • 2 tablespoons of lemon juice
  • ½ tablespoon of ginger garlic paste (adrak lehsun paste)
  • 2 tablespoons of crushed green chilies (hari mirch paste)
  • ½ cup fried onion (pyaz)
  • ¼ cup of cooking oil
  • ½ cup of chopped fresh mint leaves
  • ½ cup of chopped fresh coriander leaves
  • ½ cup fried onion

For Rice

  • ½ kg basmati rice (chawal) boiled until ¾ done
  • 1 sachet of chicken powder 10gms
  • 1 and ½ tablespoons of ghee
  • 1-2 tablespoons of water
  • ½ teaspoon of yellow food color or as required
  • 1/ cup fried onion (pyaz)

In a mixing bowl add baby potatoes, and yellow food color mix well and keep that aside.

Heat oil in a wok add potatoes and shallow fry them until golden brown for 12- 15 minutes and set aside.
In another bowl, add yogurt, chicken powder, red chili powder, garam masala powder, turmeric powder, coriander powder, salt, nutmeg, mace powder, lemon juice, ginger garlic paste, green chili, and fried onion mix it all well and set it aside. See other recipes at biryani recipes

  • Heat cooking oil again pour the spicy yogurt mixture and mix well.
  • Add fried potatoes, fresh coriander, mint leaves, and fried onion on top.
  • Now add those ¾ boiled rice on top. Add ghee and sprinkle the chicken powder on the rice.

In water mix yellow food color and pour on the layer of rice, add some fried onion cover, and steam cook for 15- 20 minutes.

  • Serve once the rice is fully cooked.
  • Enjoy with raita and salad on the side.
