Ingredients:
Chicken Marination:
1 kg chicken
1 tbsp mustard oil
1/2 tbsp salt
1/2 tbsp ginger paste
1/2 tbsp garlic paste
3 tbsp plain yogurt
1 tsp biryani masala
1/2 tsp red chili
Biryani Base:
6 cloves
4 cardamoms
2 cinnamon sticks
1/2 cup onion
1 cup water
1 tsp kewra water
1 1/2 tbsp biryani masala
1/2 cup fried onions
6 green chilies
4 tbsp powdered milk
1 tsp rose water
2 tbsp ghee
2 tbsp saffron water
2 tbsp fried onions
Rice:
2 cinnamon sticks
5-6 cloves
4 cardamoms
2 bay leaves
1/2 tsp shah jeera
1/2 tsp ginger
6 cups basmati rice
Instructions:
Begin by marinating the chicken with ginger and garlic paste, mustard oil, yogurt, biryani masala, and red chili. Ensure thorough mixing and marinate for at least 30-45 minutes.Top delicious dishes at biryani recipes
In a large pot, add sliced onions and oil. Fry the onions until they turn golden brown, then remove the pot from heat.
Transfer the marinated chicken into a pot. Add cloves, cardamoms, cinnamon sticks, sliced onions, and marinated chicken pieces. Fry for 5 minutes.
Pour hot water over the chicken. Add kewra water and mix in biryani masala. Cook for 25 minutes on low heat with the lid on.
In a separate pot, add cinnamon sticks in salted water along with cardamoms, bay leaves, shah jeera, and ginger. After steeping for 3 minutes, strain out the water.
- Add basmati rice soaked for 30 minutes. Cover with a lid and cook for 5 minutes on high heat.
- Uncover, take out the rice, and set aside.
- To the chicken pot, add a handful of fried onions, powdered milk, and green chilies.
- Place the cooked rice on top of the chicken. Pour kewra water, rose water, and saffron water over the rice.
- Add ghee and fried onions. Seal the pot with foil paper and cover with a lid.
- Cook for 35 minutes on low heat.
- Remove from heat and gently mix before serving.
